5 Forgotten Veggies

Want to know the 5 most forgotten vegetables like Eggplant?

Reason: Eggplant is a good source of fiber, potassium, manganese and copper. The skin is full of phytochemicals with anti-cancer and anti-microbial properties, plus flavonoids.

Cauliflower

Reason: Cauliflower is packed with Vitamin C, Vitamin K, folate, fiber, omega-3 fatty acids. And it's good for your immune system. It has sulfur-containing phytonutrients, which promote the detoxifying process and cancer prevention.

Winter Squash
Reason: Squash offers up high amounts of vitamins A and C and potassium. It's also a good source of omega-3 fatty acids. 

Bok Choy
Reason: Known as Snow Cabbage, Bok Choy is rich in vitamin C, contains indoles and phytochemicals and is a great source of fiber, potassium and calcium. 

Swiss Chard w/other greens
Reason: Greens are packed with folate, vitamin K, A and C. They provide a good amount of manganese and dietary fiber, and many contain phytochemicals that reduce the risk different cancers.
